This version combines our love for herbs with our love for spice. Make it as a fresh side salad or pair it with our bulgolgi marinated mushrooms over a bed of sticky rice - you wont be dissapointed.
- 1 cucumber
- 1tsp ginger - grated
- 3 Tbs fresh Thai Basil
- 3 Tbs Mint
- 1 red Thai Chili pepper
- 1 Tbs Sesame seeds
- ⅓ cup Rice wine vinegar
- 1 Tbs Sugar
- Juice of 1 grapefruit
- 1tsp Salt
Combine sugar, rice wine vinegar, grape fruit juice, ginger, water and salt in a small sauce pan over medium heat until sugar is dissolved.
While sugar is dissolving use a mondoline to slice cucumber length wise into long strips.
Pour the dressing over the cucumber strips and place in fridge to cool.
Chop up the fresh herbs and when cumcumber salade is fully chilled toss in herbs and sesame seeds
