Artichoke & Herby Mustard Vinaigrette

Grilling your artichoke after it has been steamed gives it the perfect bite and brings out a subtle smokeyness we can’t live without. Pair it with our herby vinaigrette and this recipe will take your grilling skills to the next level.



  • 3 large artichokes
  • 1 lemon
  • 3 Bay leaf
  • 2 cloves garlic
  • Herby mustard vinaigrette

Herby Mustard Vinaigrette

  • 2 TBS Dijon mustard
  • ½ cup olive oil
  • Juice of ½ lemon
  • 3tsp balsamic
  • Pinch of flaked salt
  • Cracked pepper
  • 2 TBS Fresh herb of choice ( We used Dill & Thyme)
  • 2tsp maple syrup

Whisk all ingredients together and set aside



Artichoke & Herby Mustard Vinaigrette

Clean your artichokes by removing all firm outside leafs and hard tops. Cut artichoke in half and scrape out furry choke.

Rub the artichoke with lemon so that it does not oxidize and turn brown

In a medium saucepan add 2 inches of water, bay leaf, garlic and ½ lemon.

Bring to a boil and place steamer basket on top with artichoke halves.

Steam for 15-20 minutes or until tender

While artichokes are steaming heat your grill

When artichokes are finished steaming remove from saucepan and brush with olive oil

Place cut side down on hot grill and sear on all sides until char marks are present.

Remove from grill, drizzle with herby mustard vinaigrette and serve immediately.
